A delicious, healthy and filling lunch or dinner.

Ingredients (4 persons)

• 2 sweet potatoes per person (depending on size and appetite)
• 1/2 cucumber
• 2 tomatoes
• 1/2 bell pepper
• 1 carrot
• lemon juice
• corn
• 2 soy yoghurt
• seasoning (salt, pepper, curry, herbs)

Preparations

Preheat the oven to 180° air circulation (or 200° upper and lower heat), then wash the sweet potatoes, cut tiny wholes on the top and put them on a baking sheet for around an hour.
Then cut the cucumber, tomatoes, bell pepper, carrot or any other veggetables that you like raw. Add a little lemon juice and mix it. Then make a sauce with the plain soy yoghurt and seasonings. Once the sweet potatoes are soft, take them out and cut them open in the middle.

Add the soy yoghurt and the veggie-salad and enjoy! 🙂
