Delicousness with Quinoa, bell-peppers and vegetables. The healthy alternative to the traditional rice-meat-filling.


• 1-2 bell peppers per person (depending on size and appetite)
• 50g Quinoa per person
• saisonal and regional vegetables
• parsley (optional, for decoration)


Cook the quinoa in double time water and add a little salt to it. Preheat the oven to 180°, then cut the peppers in half or cut off the top (don’t throw it away, you will add it on top again after filling)
Cut the vegetables (for example onion, carrots, cellerie, leech, tomatoes) and add it to the quinoa once it is soft. Add salt, pepper, chili powder and herbs. Then fill it into the peppers and bake it in the oven until the peppers are soft (around 20 min). You also can add some vegan cheese on top.

By the way: you also can cook the peppers in a big pan. Like this, they cannot fall over as easily as if you put them on a baking sheet. Put 1 centimeter of water in a pot and cook them for around 20 minutes.
